Ingredients- serves 2
240g chicken - cut into cubes
1 pepper
6 cherry tomatoes
1/2 courgette
Marinade:
100ml soy sauce
Pinch of chilli flakes
2 tbsp maple syrup
2 tspn sriracha seasoning
1 tbsp cider vinegar
Method
Mix the marinade ingredients together well in a large bowl then add the cubed chicken to this. Pop in fridge for 15 minutes minimum. Slice the veg. Then simply arrange the chicken and veg on metal skewers. Place these onto an oven proof dish and pour over the rest of the marinade. Pop in the oven at 180* (fan) for 20 minutes turning after half way.
