Pepper, Paprika & Lentil Soup


Ingredients - serves 4

200g lentils

1 tin of butter beans

3 red peppers

2 garlic cloves

2 veggie stock cubes

1 tsp of smoked paprika

1 tsp chilli powder (hot or mild, your preference)

1.5 ltr hot water


Method

Roast the peppers and garlic in the oven for 30 minutes at 170*. Meanwhile add everything else (apart from the beans) to a large pot and bring to the boil. Then turn down the heat to a gentle simmer. Once the peppers are roasted add these and the beans to the pot and cook for a further 10 minutes then blend! Season with salt & pepper.
