Ingredients: serves 5
220g Vivera plant mince
1.5kg Maris Piper potatoes
2 medium carrots
1 onion
1 celery stick
100g peas
700ml veggie stock
Veggie gravy to thicken
Cheddar or vegan cheese
Method
Chop all the veg then saute in a pan for 10 minutes. Next add the mince and mix well. Now add the stock and allow to simmer for 25 minutes with the lid on. In a separate pot boil your peeled potatoes for 15-20 minutes then drain and mash. Now add some veggie gravy granules to your mince to thicken. Now transfer the mince to an oven-proof dish and begin to spoon the mash over the mince. Gently run over the mash with a fork to get it nice and even. Now sprinkle over the cheese. Add some salt and pepper and pop into the oven for 20 minutes at 190* until the cheese goes golden. Enjoy!
