Ingredients - Serves 2
2 Whole eggs
340g Smoked haddock
170g pre cooked microwave rice
1 onion - chopped finely
2 tsp curry powder
1 tsp mustard seeds
Method
Begin by boiling your eggs. In a separate pan/wok gently fry off the onions for 5 minutes in 1 cal oil spray (or olive oil if you'd like more calories and fats). Add the fish, curry powder and mustard seeds and cook for 10 minutes. Next pop the rice in and cook for 2-3 minutes mixing everything well. You can season with salt and pepper. Peel your eggs and serve on top of your dish with spring onions.
