10 Min Spinach & Chickpea Rigatoni

Ingredients - Serves 4-5
570g Bold Bean Co Queen Chick Peas
400g Jar Mutti Tomato & Basil pasta sauce
2 Tablespoons Parmesan 300g Rigatoni (dry weight)
Good handful of spinach
Method
Blend the chick peas in a blender until nice and smooth, then add the pasta sauce and parmesan then blend again. Meanwhile cook the pasta as per packet instructions.
In a seperate frying pan wilt the spinach, this will only take a couple of minutes. Set aside once done.
Drain the pasta then add the sauce, heat thoroughly then dish up. Add the spinach, salt and black pepper and a little more parmesan for serving! Enjoy!
