Spaghetti Bolognese with Turkey Mince

Ingredients - serves 5
1 Carrot
2 sticks celery
1 red pepper
100g mushrooms
1 tsp dried oregano
1 tsp smoked paprika
100ml beef stock
1 tbsp tomato purée
500g lean turkey mince
1x 400g jar tomato & basil pasta sauce (we used Mutti)
300g dried wholegrain spaghetti
Method
Chop all the veg up nice and small then add to a hot pan with a little drizzle of olive oil. Cook for around 5-8 minutes then add the mince and brown off. Next add the spices, tomato puree and stock. Give it a good mix then finally add the pasta sauce. Pop the lid on and gently simmer for 25 minutes. Meanwhile, cook the pasta as per packet instructions. Once ready serve with some black pepper and parmesan (optional).
