All the Greens & Parmesan Soup



Ingredients - Serves 5


1 Medium Onion

2 Large Garlic Cloves

200g Frozen Peas

150g Frozen Edamame Beans

100g Cavolo Nero Kale

200g Spinach

2 Chicken stock cubes

1 Vegetable stock cube

1500ml Water

20g Parmesan Cheese


Optional for serving:

50g greek yogurt, 8g chopped hazelnuts


Method


Chop the kale, spinach and onion and add to a warm pan with a splash of water. Next add the chopped garlic and fry for 2-3 minutes. Add the peas and beans and mix well. Now add the stock and water. Bring to the boil and then simmer for 30 minutes. Once ready blend until smooth then add in the cheese. Enjoy with optional extras and some brown sourdough!
