Baked Eggs in Portobello Mushrooms


Serves 1


Ingredients:

  • 3 whole eggs

  • 3 portobello mushrooms

  • Sprinkle of parsley

  • Slice of wholegrain bread

  • Salt & pepper

Method:

Wash the mushrooms and remove the stock. Place on an oven proof baking tray. Crack the eggs into each mushroom and season with salt and pepper. You could add a sprinkle of cayenne pepper if you like spicy eggs! Pop in the oven for around 15-18 minutes. Once ready sprinkle some parsley on them. Serve with toast cut into strips for dipping!
