Banana & Maple French toast with peanut butter sauce

Ingredients - Serves 1

1 egg

1 slice wholemeal bread

1 medium banana

10g peanut butter

Skinny Sauce- maple syrup

7g runny honey


Beat the egg in large bowl then dip each side of your bread into the egg. Add some one cal oil to your pan (or olive oil if you require higher calories/fats). Fry off for a couple of minutes on each side. At the same time chop the banana and add to the pan. Drizzle over the honey. In a separate dish add a small splash of hot water to the peanut butter and mix to a runny sauce. Once the bread and bananas are golden remove and place on a plate, drizzle with your peanut butter sauce and maple syrup! Add some berries and dollop of Greek yogurt if you like. Enjoy!

To make this vegan, swap the egg for 8g of olive oil and add more maple syrup instead of honey.
