Bulgar wheat & Kidney Bean Salad


Ingredients - serves 3

300g of cooked bulgar wheat

1 tin kidney beans- drained

Small handful parsely

Handful of spinach - chopped

1 veggie stock cube


Method

Cook the bulgar wheat in water and the stock cube as per the packet instructions. Once cooked, add the beans, spinach, parsley and salt and pepper to taste. This is a great accompaniment or as a lunch box salad too! You can add lots to this to make it a main meal also!
