Serves 4
Ingredients:
480g Chicken Breast - cut chunky
3 heaped tsps of tandoori spice
200g 0% greek yogurt
1 tsp of tomato puree
2 crushed garlic cloves
Handful of coriander
Good pinch of salt
Roasted Veg:
1 Pepper
1 courgette
1 aubergine

Method:
Mix the above ingredients together then coat the chicken with it and set into the fridge for an hour or so. Place the chicken on a baking tray and cook in the oven for 25 minutes at 180*, turning half way. On a separate tray place the veg (cut chunky) , sprinkle with salt and pop in the oven with the chicken. Serve with rice or pitta. (not included in nutritional information)
