Ingredients - serves 5
400g farfalle pasta
1 red pepper
3 garlic cloves - chopped
100g cherry tomatoes
1 large courgette
Good handful basil
Tsp dried oregano
Tin of tomatoes
200g block of feta
Drizzle of oilive oil - around a table spoon
Method
Place the feta in the middle of a casserole dish then add the tin of tomatoes, cherry tomatoes, chopped courgette, basil and garlic all around it. Sprinkle over the oregano then drizzle with oil. Place into the oven at 180* for 40 mins. Meanwhile cook the pasta as per the packet instructions. Once ready, drain then add to the feta dish. Stir it well. Serve with black pepper and optional parmesan.
