Chickpea & Sweet Potato Curry


Ingredients- serves 5

1 tin chick peas - drained

1 packet of puy lentils

2 tins of chopped tomatoes

1 onion

100g spinach

450g sweet potato- cubed

4 tsp curry powder - we used tandoori

2 tsp garam masala

1 tsp garlic puree

1/2 tsp turmeric

1 tsp smoked paprika

Good handful coriander


Method

Add the sweet potato and onion to the pan with the garlic puree and a splash of water. Cook for 5 minutes. Next add the lentils, chickpeas and spinach. Now mix in the spices then add the chopped tomatoes and mix well. Pop the lid on and gently simmer for 30-45 minutes (or until the sweet potato is soft). Just before it's ready, mix through some coriander leaving a little for garnishing! Enjoy with some rice.
