Ingredients:
400g Cous cous
2 peppers
1 carrot
1/2 courgette
1 red onion
1 stick of celery
40g raisins
500ml vegetable stock
240g chick peas
Add your favourite spices
Method:
In a large casserole dish, add the couscous then cover with the 500ml of water and stock. Put the lid on and leave for 5-10 minutes. In a separate pan fry off the chopped vegetables and raisins and add spices of your choice. We recommend chilli, ginger, cumin, turmeric. Once cooked add to the couscous and mix thoroughly.
