Creamy Chicken Cajun/Fajita Pasta


Ingredients - serves 5

1 pepper

1 aubergine

1 small onion

200g cherry tomatoes

1 garlic clove

250g quark

40g cheddar cheese

Spinach (good handful)

Cajun or Fajita seasoning

Sriracha seasoning

250g wholewheat pasta

500g chicken breast


Method

Chop all veg and drizzle with a little rapeseed, olive oil or One Cal oil spray for less calories. Add the garlic clove in whole with the veg in a large baking/casserole dish. Sprinkle a few teaspoons of cajun or fajita spice over the veg and pop in the oven for 30-40 minutes at around 170*. Now coat the chicken breasts in some sriracha seasoning, wrap in foil and place in the oven for 35-40 minutes with the veg. Meanwhile cook the pasta as per packet instructions around 15 minutes before chicken/veg to be ready. When the veg is roasted blend this well and add to a pan, add a pinch of salt then stir in the quark and cheese. Now add the drained pasta and chopped spinach. Mix well. Plate up and add the chicken - you can slice or place a whole breast on top. Enjoy!
