Indian Cottage Pie

Serves 4


  • 500g lean mince - beef

  • 1 tin of chopped tomatoes

  • 15 cherry tomatoes

  • 200g butternut squash

  • 1 red onion

  • 1 beef/vegetable stock cube 1 kg bag of new potatoes

  • 2 tsp curry powder

  • 1/2 tsp turmeric

  • 1 tsp ginger

  • Salt


Cook the mince, vegetables, tomatoes, stock and spices for 20-30 minutes on a medium heat. Meanwhile boil the potatoes in a separate pot. Pour the mince into a large open casserole dish. When the potatoes are cooked , sprinkle them with salt and squash them down. Add these to the top of the mince mixture, sprinkle with

turmeric. Pop back in the oven for 15 minutes.

Approximate calories per serving 310 C 41g F 5.3g P 23g

To make this vegan you can use 400g of lentils instead of beef.
