Mango Chicken Bowl

Serves 1


  • 120g chicken breast

  • 1 pepper (any colour)

  • 1/2 onion

  • Handful of spinach

  • Mexican spice (enough to coat chicken/to your tastes)

  • 100g fresh mango

  • 20g salsa


Simply cook a chicken in the Mexican spices in the oven with your vegetables for 25mins at 180*. Slice the chicken breast and add to a bowl with the spinach on the bottom then place the chopped mango and salsa on top. Serve with a green salad.
