Ingredients - serves 1
1/2 a medium sweet potato
100g tofu
50g avocado
50g chickpeas
60g green beans
4 stocks tenderstem broccoli
Handful spinach
100g cavolo nero kale
Gherkins - 4
Method
Cook the potato in the microwave for 8-10 minutes then pop in the oven until everything else is ready. Bake the tofu in the oven for 15 minutes at 180*, you can add some soy, chilli flakes. Steam the green beans, kale, broccoli, and spinach for 6-8 minutes. Once everything is ready, add to a big bowl with your chickpeas ( you can add spice to these too), avocado, and gherkins.
