Plant Based Chilli


Ingredients- serves 4

220g Vivera mince

2 sticks of celery

1 pepper

Handful of cherry tomatoes

1/2 courgette

1 garlic clove

1/2 red chilli

1 tspn ground cumin

1 tspn smoked paprika

1/2 tspn chilli flakes

100ml veg stock

1 tin chopped tomatoes

1 tin kidney beans- drained

150g chick peas


Method

Chop and sautée all the veg for 5 minutes in a large pot with a splash of water. Add in the spices, stock, tinned tomatoes, beans and chick peas and mix well. Then add the mince. Gently simmer for 25-30 minutes.


Serve with rice, pitta, wraps whatever you like!
