Roasted Veg & Salmon Rigatoni


Ingredients - serves 5

Sauce

250g mushrooms

1 red or yellow pepper

1 onion

3 cloves of garlic

2 jars of tomato pasta sauce (around 600-800g)


Roasted Veg

300g cherry tomatoes

1 courgette

1 aubergine

1 red pepper

250g rigatoni pasta


5 Salmon fillets

1 tsp smoked paprika

Salt & Pepper


Method

Blend the sauce ingredients and add to a pan with the pasta sauce. Simmer for 30 minutes. Meanwhile, chop the veg for roasting and pop in an oven-proof dish with a sprinkle of salt and roast for 30-40 minutes at 190*. Lastly add the smoked paprika, salt & pepper to the salmon fillets, wrap them in a parcel of foil and roast in the oven along side the veg for around 25-30 minutes. Whilst everything is roasting/simmering cook 250g of rigatoni as per packet instructions. Once everything is ready, drain the pasta and add to the sauce then dish up. Add a large spoonful of roasted veg and a salmon fillet to each bowl of pasta. Enjoy!
