Salt & Pepper Chicken

Serves 4


  • 500g chicken breast - cubed

  • 2 bell peppers

  • 1 onion

  • 1-2 chillis

  • Spring onion (for serving)

  • 16g olive oil

  • 50g corn flour

  • 2-3 heaped teaspoons (30-40g) of Kerala spices (use this brand or any other brand of Chinese Salt and Chilli Pepper seasoning)


Marinate your chicken in the oil and spice (if time is available, for at least 30 minutes before cooking). Chop up all the veg and set aside. Just before you are ready to cook the chicken coat it in the corn flour then add to a hot pan. Cook for 5-6 minutes then add the veg. Continue to cook for around 10 minutes until cooked and cooked thoroughly. Sprinkle some spring onion and serve with or without rice (rice is not included in the nutritional information).
