Ingredients Serves 2
1/4 red onion
1 green pepper
2-3 radish
Handful of Thai basil
1cm piece fresh ginger
30g cashews
Squeeze of lime
Dressing
2 tbsp soy sauce
1cm piece ginger - grated
1-2 tbsp runny honey
Squeeze of lime
Method
For the salad, chop everything up nice and finely, slicing the peppers, radish and onion. Cut the ginger very finely. Then simply mix all the ingredients well.
Mix the dressing ingredients in a separate bowl, you can pour this over or have as a dipping sauce to add to a main meal. This salad and sauce is ideal with some chicken/tofu/salmon and sticky rice!
