Ingredients - serves 1
150g Firm tofu- marinade in 1/2 chilli/1cm ginger/1 garlic clove/splash soy sauce
1 red pepper thinly sliced
1 red chilli/2cm ginger/2 clove garlic
60g cavolo nero kale
30g edamame beans
45g wholegrain rice noodles
300ml veg stock
15ml soy sauce
6g sesame seeds
Method
Cube the tofu and marinade in the chilli/ginger/garlic/soy for 10-15 minutes. Then cook for 15 minutes in the oven at 180*- coat in 1 cal oil spray. Meanwhile, steam all of the veg and edamames for 7-9 minutes, add in the other half of the chilli/ginger/garlic with the veg too. Cook the noodles as per packet instructions. Once everything is ready add your hot veg stock and 15ml of soy sauce to a large bowl then to serve place in the tofu, noodles and vegetables!
