Tofu with Black Bean Sauce & Green Peppers


Ingredients - serves 1

150g firm tofu

60g black beans

150g new potatoes - pre cooked and chopped

1 green pepper - chopped

3 baby courgettes - sliced

2x tbsp black bean sauce

Chilli flakes

Splash of soy sauce

Salt - to taste


Method

Cube the tofu and splash over the soy sauce and sprinkle on some chilli flakes. Bake for 15 minutes at 170* in the oven. Meanwhile, fry the remaining ingredients for 5 minutes on a high heat to create a charred effect on the veg. You can use one cal oil spray or olive oil if you'd like higher calories. Add the tofu and stir in the black bean sauce. Mix well then serve!
