Achari Chicken Curry



Ingredients- Serves 4


480g Chicken Breasts cubed

1 Medium onion

4 Cloves of garlic - crushed

15ml Olive oil

1 tsp mustard seeds

1 tsp fennel seeds

2 tspn ground cumin

1 tin of chopped tomatoes

70g Achari paste

50g spinach

Good handful of coriander


Method


Finely slice the onion and add this to a warm pan with the olive oil, garlic and spices. Sautee for 5-8 minutes. Add the cubed chicken breasts and cook for further 8 minutes. Now add the tin of tomatoes and Achari paste. Leave to gently simmer for 25 mins. Once ready stir in the coriander and spinach. Add salt to taste. Serve with rice, for added fibre use brown/wholegrain.
