Ingredients - serves 1
85g Tilda microwave coconut rice
100g black beans
1 tspn cajun spice
Salt & pepper
Coat the chicken in your fave spices.
Pre cook the chicken in the oven for 25 mins at 180*.
Once ready slice up and chuck into a warm pan with the rice and beans.
Cook for a further 3-5 minutes. Then stir the spinach through until it has wilted.
You can add extra spice to the dish if you prefer. Season to taste.
You can make this dish with any protein source!
