Chicken in Oyster Sauce



Ingredients: serves 2


250g chicken breast

1 1/2 whole courgette- ribboned

1-2 red chilli-finley sliced

2-3 cloves of garlic-finely chopped

2-3 table spoons of oyster sauce

170g basmati (microwave) rice


Method

Thinly slice the chicken and marinade in 2-3 tablespoons of oyster sauce and set aside. In a hot pan gently fry the courgette, chilli and garlic for 5 minutes. Remove from the pan and place in a separate bowl- cover this with a plate to keep the heat in. Now add the chicken to the pan, you can spray in some one cal oil spray if required. Cook for a further 15-20 minutes then transfer to a plate with the pre cooked courgettes (if these have cooled down you can pop back in the pan with the chicken) and add your rice!
