900g lean diced beef
1 jar of jalapeños (drained)
1 tin of kidney beans (drained)
2 tins of tomatoes
2 large garlic cloves
3 tsp smoked paprika
3 tsp mild chilli powder
3 tsp ground cumin
Beef stock cube
A pinch of habanero chilli flakes (optional)
Add the beef to a large hot pan (ovenproof with a lid) with a dash of oil or one cal spray. Cook until browned. Add in all the spices and cook for a few minutes. Add in everything else, give it a good stir through and get it nice and hot. Now pop the lid on and place in the oven on a low heat 150* for 3+hours - until the meat is nice and tender. Checking after 2 hours that the meat is becoming tender.

To make this vegan, use 3 tins of your fave beans, add more veg and use a veg stock .
