Serves 4
Ingredients:
3 tins of drained beans of your choice
2 x 400ml of tinned tomatoes
3 peppers
1 large carrot
2 cloves of garlic
2 heaped tsps of smoked paprika
2 heaped tsps of chilli powder
2 heaped tsps of ground cumin
Salt
1 vegetable stock cube
Method:
Chop the vegetables, and add everything to a large oven proof casserole dish. Bring to the boil then pop in the oven for 50 mins at around 160* (fan assisted oven). Serve with greek (or plant-based) yogurt, tortilla chips, rice, whatever you like!
