Chunky Veggie & Bean Chilli

Serves 4


Ingredients:

  • 3 tins of drained beans of your choice

  • 2 x 400ml of tinned tomatoes

  • 3 peppers

  • 1 large carrot

  • 2 cloves of garlic

  • 2 heaped tsps of smoked paprika

  • 2 heaped tsps of chilli powder

  • 2 heaped tsps of ground cumin

  • Salt

  • 1 vegetable stock cube

Method:

Chop the vegetables, and add everything to a large oven proof casserole dish. Bring to the boil then pop in the oven for 50 mins at around 160* (fan assisted oven). Serve with greek (or plant-based) yogurt, tortilla chips, rice, whatever you like!
