Ingredients - serves 3
450g firm tofu
30ml soy sauce
50g peanut butter
400ml light coconut milk (tin)
15ml maple syrup
1/2 red chilli
1" piece fresh ginger - grated
1-2 cloves garlic
1 yellow pepper
100g tenderstem broccoli
100g baby corn
Method
Cube the tofu then add to a bowl with half the soy sauce, mix well. Pop onto a baking tray with some one cal oil spray or grease proof paper and bake for 15 minutes at 180*. Chop the pepper, corn and trim the stalks of the broccoli and add to a hot pan and fry for around 10-15 minutes. For the sauce, in a separate pan, fry off the garlic, ginger and chilli in some one cal oil spray for 5 minutes or so until soft. Then add the peanut butter and mix well. Pour in the coconut milk and mix until it all comes together. Then add the soy sauce and maple syrup. Simply add the tofu, veg and any rice/pasta to your plate and pour the sauce over. Enjoy!
