Ingredients - serves 2
100g wholewheat noodles (Blue Dragon)
100g edamame beans
8 stalks tenderstem broccoli
1 pepper- any colour
Soy sauce - as much as you need!
Honey- 2 tablespoons
Teaspoon garlic puree
100g cavolo nero kale
Method
Sauté all veg (apart from the kale which you will steam) in the garlic, splash of water and soy sauce for around 8 minutes. Meanwhile, cook the noodles as per packet instructions. Once ready, drain and spoon into the pan with the veg. You can add more soy sauce and drizzle the honey on and mix well. You can add other toppings like avocado, sliced courgette and chilli.
