Ingredients - serves 4
400g chicken breast
2 medium garlic cloves
30ml rapeseed oil
Good handful of coriander
Good handful of spinach
Method
Add all of the ingredients apart from the chicken into a pestle and mortar. Crush everthing up until it resembles a paste like pesto. Spoon this mixture onto the chicken breasts then leave if you can for 15 minutes or so. Pop the chicken into the oven in an oven-proof casserole dish for around 25 minutes at 180* (fan assisted).
