Ingredients:
400g of firm tofu
1 carrot, handful sugar snap peas
bunch spring onion
1 red pepper
1 red chilli
3 cloves garlic
salt - pinch
2cm piece of fresh ginger
Splash of soy sauce
16ml olive oil (or you can use one cal oil sprayer a lower calorie choice)
Method:
First of all cut the tofu into cubes and drain the moisture by pressing down on with kitchen roll. Then marinate (for around 15 minutes at least) in the chopped ginger, garlic, salt, chilli and soy, Place on a baking tray and bake for 15 minutes at 180*. Meanwhile add the chopped veg and the oil to the pan and fry veg for 10 minutes. Add the baked tofu and mix well. Serve with rice or noodles (not included in nutritional information).
