Ginger & Lime Salmon Bowl with Sticky Rice




Ingredients - serves 2

2 salmon fillets (around 150g each)

1 lime - sliced

1 thumb size piece of ginger - grated

4 spring onions - chopped finely

2 x Veetee sticky rice

Tbsp of pickled sushi ginger

6 tenderstem broccoli

100g cavolo nero kale

Drizzle of soy sauce


Method

Place the salmon on some tin foil and add the grated ginger, spring onions and lime to the top then wrap up well. Cook in the oven at 180* for 30 minutes. Steam the green veg for 6-9 minutes. When the salmon is ready transfer it to a large bowl with your rice and veg. Drizzle the rice with soy sauce and scatter some pickled ginger around the rice. Enjoy!
