Mexican Chicken Pasta with Rocket & Parsley



Ingredients -serves 1


50g wholewheat pasta

140g pre cooked shop bought mexican chicken (M&S)

1 tomato

Handful of rocket

Sprinkle of fresh parsley

10g green pesto


Method


Cook pasta as per packet instructions. Once cooked rinse in cold water to cool. De-seed the tomato and cut into small cubes. Add the pesto to the pasta, mixing well. Then add the chicken and tomatoes. Garnish with rocket and parsley.
