Mexican Fajita Bowl


Ingredients: serves 2

1 pack of Mexican rice (microwave)

1/2 tin of kidney beans

250g firm tofu ( you can use meat if you prefer)

2 peppers

1 onion

2 tablespoons of corn

Fajita flavour seasoning

Handful of spinach

Handful of coriander

Optional toppings: hummus, guacamole, jalepenos, salsa


Method

Cube your tofu and add to a bowl with a little drizzle of olive or rapeseed oil then add a generous sprinkling of the fajita flavour seasoning. Chop the spinach and coriander and add this too. Add a pinch of salt. Place the tofu on some baking paper and pop in the oven for 15 minutes at 180*. When this is ready simply build your bowl by adding all of the above to the bowl! Add any optional toppings you enjoy.
