Ingredients - serves 4
1 aubergine
1 onion
4 tomatoes
200g mushrooms
300g orzo pasta
1 jar of pasta sauce (we used 600g jar Lloyd Grossman tomato & basil sauce)
300ml veg stock
1/2 tsp dried basil,oregano, fennel seeds
Fresh basil/parsley for seasoning
Salt & pepper
Method
Chop the veg and cook in a large pan (that has a lid) for around 15 mins. You can use a splash of water or oil. Next add the spices, sauce, stock and pasta and mix well. Allow to cook for 25-30 mins (lid on but stirring frequently) or until the pasta is soft. You can add more water as you go if you need to. Season with fresh basil or parsley, salt and black pepper.
