One Pot Paprika Chicken


Ingredients - serves 4


200g cherry tomatoes

1 red onion

480g chicken

500g new potatoes

200ml chicken stock

1 tsp smoked paprika

1 tsp dried oregano

pinch of salt & black pepper

spinach ( to serve)


Method


Parboil the new potatoes for 8-10 minutes. Place the tomatoes, sliced onion, potatoes (halved if prefered) and chicken into a casserole dish. Sprinkle over the paprika, oregano, salt and pepper then pour in the stock. Pop into the oven and cook for 45-50 minutes at 180*. Serve on a bed of wilted spinach.
