
Ingredients - serves 4
3 peppers - chopped
100g frozen peas
100g edamame beans (if using frozen allow to thaw first)
250g orzo
600g pasta sauce - we used Lloyd Grossman tomato & chilli
300ml vegetable stock
1 tsp dried basil
1 tsp oregano
250g cooked prawns
Method
Add the veg and a splash of water to a large pan (one with a lid) and cook for 5-10 minutes. Next add the spices, sauce and stock. Mix well then add the pasta. Pop the lid on and give it a stir every few minutes. Cook for around 30-45 minutes or until the pasta is cooked to your liking. When it's ready add in the prawns and cook for a further 5 minutes.
