Quick Spag Bol

Ingredients - Serves 4

500g 5% lean beef mince

1 Tin chopped tomatoes

1 carrot - chopped

1 courgette- chopped

1 pepper - chopped

1 onion - chopped

1 tsp oregano

1 1/2 tsp smoked paprika

1/2 tsp lazy garlic

pinch of salt

handful of basil

150ml beef stock

200g whole-wheat spaghetti

15g parmesan (per serving)


Brown the mince in large pot with a splash of water. Add the spices and garlic. Now add the veg and cook for 5 minutes. Add the stock and chopped tomatoes. Stir in the basil and simmer gently for 25 minutes. Cook the pasta as per the packet instructions. Once ready serve with parmesan and black pepper.
