Ingredients:
250g fillet steak
2 tbsp red pesto
1 red onion
250g new potatoes
3 garlic cloves-crushed
Green beans
Sea salt & black pepper
Small handful of coriander
Method:
Half the potatoes and boil in a large pan for around 15 minutes. Season the room temperature steaks with plenty of sea salt and black pepper. Add to a hot pan with one cal oil spray. 2-3 minutes each side for medium -rare or 4-5 minutes each side for a more well done steak. Also add the sliced red onion and cook until softened. After a few minutes of cooking spread the pesto over the steaks. Pop the green beans on to boil. Remove the steaks and place on a warm plate to rest. Drain the potatoes and toss in a separate pan with the crushed garlic for a few mins. Add a pinch of salt and the coriander leaves and serve with the steak and green beans!
