Salmon with Ginger & Lime

Ingredients- serves 2

2 salmon fillets (125g each)

1 lime- sliced

2cm ginger - grated

3-4 spring onions - finely chopped

Salt & chilli flakes

300g new potatoes


Method

Place the salmon on a sheet of tin foil.

Sprinkle over the grated ginger and spring onions.

Add 2-3 slices of lime on top of the salmon then sprinkle with salt and chilli flakes.

Wrap the salmon in the foil and bake in the oven for around 25 minutes at 180*

Cook your new potatoes for 15-20 minutes, once ready add some spring onions, salt, chilli and optional parsley or corriander.
