Spicy Tofu & Cavolo Nero


Ingredients- serves 1

150g Frim Tofu

50g of any legumes (we have used the kala chana salad)

60g cavolo nero

85 wholegrain rice

Handful of mangetout

Sprinkle of sesame seeds

For the tofu

1/2 red chilli, 1cm fresh ginger grated, 1 garlic clove, splash soy sauce


Method

Cube the tofu and place in a bowl with the chopped chilli/ginger/garlic and soy for 10-20 minutes. Place in the oven on a baking tray sprayed with 1 cal oil spray and cook for 15 minutes at 180*. Meanwhile, steam the cavolo nero and the mangetout for around 7-9 minutes. Once the tofu is ready add everything to your plate with your microwaved rice.
