Ingredients - serves 3
500g Butter Beans (drained- we used Bold Bean brand )
1 large garlic clove
1 pack of sundried tomatoes (around 100g) drain the oil
1 tsp dijon mustard
180g wholewheat spaghetti
50g Parmesan
Method
Blend the garlic, mustard, 1/2 the beans and sundried tomatoes until nice and creamy. You can add some pasta water to loosen. Boil the spaghetti then once ready add it to a pan with the sauce, stir the rest of the butter beans in now too. Serve with black pepper and the Parmesan.
