Teriyaki Tofu with Sesame Spinach

Ingredients - serves 2

280g Firm tofu

2-3 tbsp teriyaki sauce

1 tbsp soy sauce

1 inch piece fresh ginger

1/2 red chilli

200g spinach

5g sesame seeds (garnish)

170g wholegrain rice (microwave rice)


Method

In a bowl add 2 tbsp teriyaki sauce, soy sauce and the finely chopped ginger and chilli. Cut the tofu into cubes (you can press the tofu first with some kitchen roll to take away any excess moisture) and add to the bowl with the sauce. Give it a good mix to make sure it's all coated. If you can leave it to marinate for 15 minutes this is best, if not you can still cook straight away. Pour the tofu onto some grease-proof baking paper on an oven-proof dish and cook in the oven for 15 minutes at 180*. After 10 minutes begin to cook your spinach. Add some 1 cal oil spray to the pan, 1 tbsp of teriyaki sauce and any left over sauce/chilli/ginger from the tofu bowl. Add the spinach and cook for around 5 minutes, moving the spinach around continuously. Serve with the tofu, rice and garnish with sesame seeds.
